A lifetime of pizza obsession leads to Neapolitan style pies at Vignette in Sebastopol.
Yesterday, my favorite neighborhood community pizzeria was named one of the
BEST RESTAURANTS IN SONOMA COUNTY by the Sonoma County Tourism Bureau. Not too shabby. And well deserved. I have become quite obsessed with the dough from Vignette, baked to perfection in the fire baked oven right in front of you.
It’s all in the Dough!
Located inside Sebastopol’s hottest new Wine County Destination, The Barlow, Vignette is poised for success. The recent addition of Neapolitan-style pizzas at Chef Mark Hopper’s pizzeria can be seen as a wonderful new addition to our foodie community here in Sonoma County.
Daily from 12pm – 9pm, Closed on Wednesdays. Vignette fires pizza in its Italian wood-fired oven.
The crust which is thought to be the heart of a good Neapolitan pizza is pillowy-tender and somehow still chewy with a crispness when you bite that you can hear and a classically ‘damp’ inside.
This dough takes A LOT of work and practice to perfect.
Pizza has been something of an obsession for Chef Hopper and handed down over generations in his family. The menu has your choice of pizzas, besides the Margherita, you may find my favorite, the Bianco Fresh mozzarella, truffled pecorino, fontina & more… or perhaps a Meatball Parm Corbari tomatoes, housemade meatballs, parmigiano reggiano & more – a house fave.
And don’t get me started on the wonderful wine list. You know I am picky. With two bottles that are only available in this restaurant and featuring many Italian and Sonoma County wine rock stars, any winelover would be happy to stay for another glass…or two.
From Sonoma County wines like Marimar Torres, to Macphail to Wind Gap to Tongue Dancer Pinot Noir… I also love the bottles by Ryme and Ciu Ciu and their Vermentino by the glass makes a lovely start to most of my meals.
